The other day I had lunch with friends and decided to make a quiche. The quiches and pies usually have cream but in this case replaced it with fresh goat cheese, much more digestible, with much less fat. The can adapt to your tastes, substitute mushrooms for many other things: asparagus, leeks, peppers, broccoli ... I added a serrano ham virutitas, you can avoid them if you want and have a vegetarian recipe, or you can substitute smoked salmon or prawns , or even tofu.
