Cupcakes and sweet almond. Gluten

I've already started with new (good) goals before they even finish the year, this is really enthusiastic. Well, not by myself, too Heva , the two have talked and we decided to try new meals, mainly grains, to make desserts and pastries, among other things. Today we have access to many types of flour, thankfully, the truth is that I want to cut some in the consumption of refined wheat flour and have to use other flours, including some gluten free. Not for celiac disease, just to try other things. Soon publish the first experiment Heva for Pink Pepper and here is mine. I recommend these cupcakes for the holidays, a dessert or snack is very of these parties, because it is made with ground almonds. You can not say that is a flour ground almonds but can be used in baking as it were, is somewhat expensive but for about 4 euros you can go about 8, which is not bad, you go for 50 cents (say 75 for the rest of the ingredients) approximately! most expensive is a donut!, right? I finally tested xanthan gum , available in very de Miguel , an online store with a good selection of deli and ingredients hard to find, also ideal for a gourmet gift. This ingredient is widely used in baking with gluten free flours because it adds texture. I was very curious and wanted to try it, because I had seen already included in many recipes. When Miguel Strongly try offered me came in handy.

I said, a perfect dessert for the holidays, and why not, for any day. The almond and sweet potatoes are healthy and very rich. We started well the new purposes.

INGREDIENTS:

250 g ground almonds (without skin)

200 grams of sweet potato mash

2 eggs

1 teaspoon salt

50g honey

1 teaspoon cinnamon

1 teaspoon xanthan

1 handful of pine nuts

PREPARATION:

Grilled sweet potato (batata) in the oven for about 30-45 minutes depending on the size of the potatoes. It is advisable to take advantage baking potato for other recipes. We check that is done by inserting a knife. What we tune and we took pulp and crush or grind. Mix all ingredients (except the pine nuts) and form a dough. Bake the muffins with suitable, well-oiled, well lined with greaseproof paper, in order to get them out without sticking. Bake for 30 minutes at 180 degrees, with pinions above to be toasted and remain tucked into the dough.

    It seems very good idea that you have had with Heva. I have proposed to try baking without butter at all possible desserts, which I join you in this plan healthier.
    Sweet potatoes rechiflan me, you can bribe me with them!

    Looks good and the ground almonds is a rich alternative to flour in baking, one of my favorite desserts is the traditional eating colineta girl and someday will encourage me to do, in it there is no flour and is the ground almonds which takes his place. A delight. So I can imagine what it must be delicious these cupcakes.

    Xanthan gum is a thickener like cornstarch, also comes from maize, is a polysaccharide.
