This recipe is dedicated to Esther and her unborn child, for giving so much love and comfort to me. This gratin casserole is full of good things: spinach, potatoes, bread, cheese and egg, and can adapt quietly make substituting vegan cheese and egg for a striped nuts or adding animal protein make a sausage or some prawns or pieces of salmon, for example.
Spinach is usually an unsuccessful vegetables with kids, and with many more too. Seek the way it is accompanied by tasty things and see what change. This recipe could not be easier, boil some potatoes, add a bunch of spinach in the last 5 minutes of cooking and we have a mashed potato and spinach seasoned properly and is in itself a terrific companion, which I usually do to often. But in this case I wanted to make a unique dish with the mashed (eye, mashed, not cream, machadad with a fork, not trituréis with mixer). To make it unique I added bread and grated cheese, which together form a thick gratin, and ended the pan, once out of the oven grating over a boiled egg. You can try other things: fried or poached egg on top, for example, and many more things that I leave to your initiative. Let me know.

We boil the peeled potatoes into small pieces to be boiled before the end of cooking add the prewashed spinach in 5 more minutes have it ready, I draw from the pot and drain them of excess water. We will also boiled eggs and bread crumbs and cheese together.
